Well I definitely was a little lazy tonight. We hadn't had chicken fajitas for quite some time and it popped into my head so I figured why not. I do love meals that taste good and only take 15 minutes to make after a long day. Normally I think I cook this dish to long (but it's a matter of taste; I like my peppers still crisp) but tonight I only left the peppers and onion on the heat for about 2 minutes. I felt that it came out nicely, now to watching basketball and a good vodka tonic.
